This is the perfect summer breakfast smoothie and a great way to refresh and recharge in the afternoon. Frozen raspberries will work if summer is long gone, and while freshly made lemonade is the best, whatever you have on hand will work in a pinch.

  • 1 packet Simpli Gluten Free Apricot Instant Oatmeal
  • 1 peach; pitted, peeled, and quartered
  • 1 cup raspberries
  • 1 cup vanilla yogurt
  • 1 cup fresh lemonade
  • ½ cup crushed ice

Add all ingredients except ice to blender. Blend until very smooth. Add ice and blend again until creamy. Serve immediately. Serves four.

Lemonade: Squeeze six lemons and add the juice to a carafe of cold water. Add simple syrup (sugar dissolved in hot water) to taste.
